I always have Trevis’ seasoning in my cupboard and they add such ‘oomph’ to my dishes! I never thought that Trevis would be able to make them for our November MyIrelandBox at all but he had hired out a new professional kitchen and then contacted me to say, ‘we are good to go!’.
What I love about our little business is that, quite often I can get these little treasures for you that nobody else will have!
Trevis is such a great cook – he is a chef of course! He taught at Cornell University and after quite a busy career and a diagnosis with MS, he moved to Dingle to begin a new, more settled life. However, he is a busy bee and has integrated so well, joining committees and weaving his talents and personality in to the Dingle community.

“The spice blend is based on one of my favorite delicatessens in Montreal, Schwartz’s. They are famous for their “smoked meat”, but the seasoning they use is so good that I created my own homage, Quebecoise Blend, and use it on so much more than meat.
It’s perfect for steaks and chops, of course, but I also love it on roasted spuds, on mashed potatoes, and a variation on an Irish classic; Roasted Root Vegetables.”
