Nicola Smyth’s award-winning Rhubarb and Ginger Jam– Big Red Kitchen
Oh, how I adore rhubarb jam with that gorgeous ginger joy to make those taste buds tingle! I run out the door most mornings with some baked bread and rhubarb and ginger jam – it’s summertime personified! I do add some peanut butter too by the way! This jam is particularly enjoyable with the bread mix that we included in the same July MyIrelandBox. I love the oatiness of the bread with the taste of rhubarb and ginger.
Tart Irish Rhubarb and fresh root ginger make for a traditional preserve that has a real bite to it.
Ingredients: Rhubarb (50%), sugar, root ginger (2%), pectin.
Prepared with 50g of fruit per 100g. Total sugar content 55g per 100g.
